Ingredients
- 3/4 cup chopped toasted almonds
- 3 cups bow tie pasta
- 1 cup smoked cheese such as Gouda
- 1 cup celery and cut thin in diagonal slices
- 1/3 cup finely chopped red onion
- 3 tablespoons fresh chives
- Cooked chopped chicken
- 2 tablespoons chopped fresh parsley
- Dressing:
- 1/3 cup fresh orange juice
- 1/4 cup fresh lemon
- 4 tablespoons evoo extra virgin olive oil
- 1 tablespoon stone ground mustard
- ground pepper to taste
- 2 teaspoons rice vinegar
- Here we go
- Place almonds on a cookie sheet and bake for about eight to ten minutes.
- Cook pasta according to directions
- Put dressing ingredients in a large bowl and use whisk to blend
- Add pasta, cheese, celery, red onion, walnuts, chicken, chives and parsely to the dressing mix and serve.
Enjoy this light and yummy salad loaded with good stuff.
