
You will need
1 package of sweet Italian sausage
2 green bell peppers
1 red bell pepper
1 orange bell pepper
1/2 onion sliced into half-rings
About 1/3 cup balsamic vinegar
1/4 sugar
Cook sausage in a saute pan according to directions
In another skillet add a small amount of olive oil and heat pan.
Add in chopped rings of bell pepper and onion
Saute away!
After about 10 minutes add in balsamic vinegar and sugar
Cook about another 15 minutes moving them around in the pan and checking on the peppers often to avoid burning.
We are just reducing the sauce and almost caramelizing everything...so be careful! :)
After the sausage is done cut into rounds
When the reduction and vegetables are done toss them all together.
Toast some sourdough hoagie rolls and serve while warm on top of these.
It is a eat with a fork sandwich but, it is delicious!
I made a spicy aoli with a little added balsamic vinegar and it went perfectly with this
