Bruschetta



I was simply famished this afternoon after a very productive day around the house. Weeds had been pulled, business taken care of, food put up in freezer for post-pregnancy and baby gal down for a nap!
I pondered what to eat... then, thanks to my good friend Lindsay's ideas,
Lunch was made!
Bruschetta!

Here is my combo

2 regular sized pieces of sour-dough bread
2 small handfuls of Parmesan cheese and mozzarella
1 clove of garlic (chopped very fine)
1 tomato and some basil
A scant amount of butter or you could use olive oil

First mix cheese, garlic and butter together in a dish (set aside)
Chop tomato into very small pieces and combine with basil
Place spread on bread and broil till just a little bubbly
Top with tomatoes and return to oven and bake at 350 for about
8 minutes or until crisp.

Delicious!
You could eat this with salad if you like... as for me two pieces was extremely filling.
I don't have much room left for eating though these days :)
Too much little man claiming space.
