Zucchini Casserole

  • 2 lb. zucchini
  • 1/2 c. grated mild cheddar
  • 3 eggs, beaten
  • 1 c. milk
  • 1/2 c. margarine, melted
  • 2 slices dry bread, cubed
  • 1 chopped onion
  • parsley to garnish

Cube zucchini, boil until tender, drain. Add other ingredients. Put into a buttered 9x13-in. baking dish and bake at 350ºF for 40 minutes.
