Yummy Zucchini Cakes

Recently my friend Mrs Lesley, gave me three beautiful Zucchini from her garden

One I used in marinara sauce and it was a tasty treat!
The other I made some delicious zucchini cakes from.
Here is what I put together


2 grated Zucchini
1/2 cup unsalted bread crumbs
Salt and pepper to taste
1 tsp garlic powder
1 tablespoon grated Parmesan cheese

Combine all but the eggs in a glass bowl
Crack the eggs into a different bowl and quickly whisk them together
Pour into bowl of Zucchini etc and stir till combined

Heat some olive oil (about 1/4″ deep in bottom of skillet) to a medium heat. When the oil is hot enough, drop a spoonful of the zucchini batter into the skillet and flatten it a little bit with a spatula.
After about two minutes, turn the cakes over (they should be golden-brown) and continue cooking for another 2-3 minutes until done.
