Good Evening,
Here is a nice inexpensive and easy recipe,
I make quite a bit for company.
(Crock pot your beans in the morning and they will be ready to work with that afternoon)
6 cups of beans (black, red or pinto)
1 can green chilies
Taco Seasoning to taste
Hot Sauce to taste
White rice cooked according to package directions, with Tomato Bullion
10-12 white/wheat tortillas
4 cups grated cheese
2 cans Enchilada Sauce
Olives and chopped green onions
Combine beans, chilies, taco seasoning and hot sauce. (Let sit for a bit while rice cooks)
Set out beans, cheese and rice in an assembly line.
Heat tortilla in saute pan briefly.
Remove and fill with a line of cheese, topped with beans and finally rice.
Tuck and roll into pan.
Once the pan is full, cover it with the two cans of sauce and top with olives and green onions.
Cook at 350 for almost 45 minutes
This recipe is simple and delicious!
