Honey Walnut Asian Chicken

Asian food is my favorite and delights my palate!
I made this little guy up a few nights ago. I really enjoyed the flavors.
Super yum!

Ingredients-
4 chicken breasts cut into small bite sized pieces
1 cup walnuts, ground and pulsed in your food processor
2 cups whole wheat flour
Salt and pepper in the flour to taste
3 eggs

Special Sauce-
1 tsp Asian fish sauce
1/2 cup ketchup
2 tablespoons soy sauce
Ginger, garlic and cayenne pepper to taste
2 tablespoons of honey
 (Combine all and set aside)

Veggies-
1 green pepper, 1 red pepper, 1/4 cup green onions and 1/2 can of pineapple tidbits

In a bowl combine the flour, nuts, salt and mix together well.
Crack and beat the three eggs in a shallow dish.

Dip the pieces of chicken in the flour mixture first, then dip in egg and then finally roll around in flour again.
Place all the pieces on a paper towel till you cycle through.

Place enough olive oil in a frying pan to cover the bottom. (Not too much though)
Fry the chicken in a about 3 batches. Just to set the flour and start the cooking process.

Set in a oiled baking dish and bake at 350 for about 15 minutes before adding sauce.
While the chicken is cooking fry up your veggies until soft and tender. Set aside to add to chicken

Add the sauce and cook about 30 minute more, turning the chicken every 10 minutes.
Add veggies to the pan and stir gently to combine.

Serve over rice and enjoy.
