So, do not feel disscouraged when you read the title of this post!
You might think to yourself "Sigh, only Bean Burritos?
Who needs a recipe for that"
It is not so much a recipe but, a style of making them!
My good friend Julie makes her burritos this way and once you try it, you will be sold!
Here are Bean Burritos
6 Tortillas (We use whole wheat)
2 cups black beans
Several spoonfulls of refried beans
Several palm fulls of cheese
2 cups of brown rice
Whatever mix-ins your little heart desires.
I use: Avocado, hot sauce, green onions and Chilantro.
1. Cook rice according to directions
2. Combine beans and some taco seasoning to it.
(As much or as little as you like)
3. When rice is done combine all ingredients in a bowl except for avacado.
4. Lay mix out in your tortillas, finishing with the avocado
and fold it up the way a beautiful burrito should be folded.
Here is the yummy part!
Pull out your griddle!
(Not just for pancakes now. is it?)
Place a small amount of butter
(Or olive oil, canola oil, margarine etc)
Set the burritos seam-side down and allow them to "grill"
Flip over after about 4 minutes
They are done when they are golden brown.
These are great reheated for lunch the next day.
These are actually fairly good for you and very inexpensive.
This has been a go-to meal for me with Conner.
( I make his a little less seasoned)

O sounds delicious mel! I must try these! It reminds me of the grilled stuffed burritoes from Taco Bell :)
