Portabella Mushroom Pizzas


These were delicious and honestly, not to bad for the body.
Plus, mushroom pizzas are so adorable.

4 Tomatoes (chopped)
1 tablespoon chopped garlic
6 fresh basil leaves
Rosemary, salt and pepper.
1 cup blended Parmesan cheese and low fat mozzarella 

Add all of these to a skillet that has a drop of coconut oil in it.
Saute all (but cheese) for about 6 minutes
While this is working in the pan, take a spoon to your mushrooms and clean them out.
(Scrape all the brown gunk out. We do not eat that!)

Place them on a cookie sheet that has been wiped with coconut oil.
Combine cheese with tomatoes.
Place a large spoonful of mix inside each mushroom.
Bake for about 13 minutes.
