Well, I love finding new dishes and boy howdy did I find one.
I made a few Melissa tweaks and here it is!
1/2 head of chopped cabbage
1 cup of chopped cilantro
4 stems of green onions chopped
2 cucumbers finely chopped
3 mint leaves chopped
Red bell pepper finely sliced
1/2 package of mung bean noodles (Cooked according to package and sliced into 1/2 inch pieces)
1 cup toasted, chopped almonds
1/2 cup wonton pieces (Optional)
2 cups cooked chicken
Dressing
1/4 cup soy sauce
Ginger, Garlic and Cayenne pepper to taste
1 tablespoon honey
1/4 sweet red chili sauce
1 lime's worth of juice
Chop all ingredients except almonds and place in bowl
Toast almonds for 10 minutes at 350 in the oven.
Toss items together with dressing about 30 minutes before serving.
Yum yum!
