Enchiladas With Zucchini





Chef Belle and I were making dinner this morning and I felt as though, we should share our recipe.
It is a twist on my friend, Julie's recipe for Chicken Enchiladas.

Chicken Zucchini Enchiladas
Ingredients
1 lovely helper named Bella. (Whoops you can't have her she is mine)

1 large zucchini (Grated in the cheese grater)
3 cups cooked chicken
1 can cream of chicken soup
2 cups rice (Seasoned with cumin and salt)
1/2 block of cream cheese
1/2 cup green onion
1 cup of black beans

Season with garlic, chili powder, cumin and cayenne to taste.

Stir together in a large bowl- Mix and mix and mix and mix
(Well, you get the idea)

Warm up tortillas in the microwave and scoop mix out in a line and roll them up.
Chef Belle, kindly started the dishes

Place in pan and you are set.

Simple Homemade Enchilada Sauce 

1 tablespoon butter
1 tablespoon flour
1 tablespoon chili powder (Or more to taste)
Scant amount of salt and garlic

2 cups water
1 can of tomato sauce

Create a rue with the butter, chili powder and flour.
Cook together and add water.
Cook till it starts to be thick and add in the tomato sauce.
Voila! You are done. Pretty simple eh?

These look good mel!! And I love your little helper :) Good pictures too! The pictures make my mouth water even though I just ate artichoke, chicken, and tomato pizza for lunch.
