Roasted red peppers, ahhhh slightly sweet, super savory and just right at home on my wee fork.
I am sure most of the people that happen past my little home on the web know how to roast a pepper.
In case you don't though, here is a quick Pepper Roasting 101 for ya!
Step 1 - Wash a nice plump, firm pepper to get all the yucky pesticides off.
(Pepper good, pesticides not so good)
Step 2- Turn on broiler and place pepper or peppers in oven on top rack
Step 3- Allow broiler to work its magic. Allow pepper to blacken and crack on all sides.
Usually about 15 or so minutes
Step 4- Remove pepper from oven and place on a sheet of foil.
Tightly wrap and let sit on counter for ten minutes.
This let's the pepper do some "alone time" cooking.
Step 5- After the time is up, cut the stem out of the pepper,
slice it open flat and scrap out all those little seeds
Step 6- Place the pepper whole in storage or slice it up.
You have some tasty, terrific roast pepper for wraps, pasta or salads.

Thank you for those simple tips,in fact I was roasting peppers a month back or so to make a roasted pepper marinade with olive oil,herbs and seasoning..:-)
