Hello, I was born in 1982 and this recipe is proof.
We all remember it, Chicken Divan! Everyone's mom made this and everyone thought their mom's was the best. Except for those few who do not care for it.
I remember, my brother asking for it as his birthday meal because it was the best!
Ahhhh, food nostalgia
Here is my version
3-4 chicken breasts
4 or more Broccoli Florets
1 can cream of chicken soup
1 can cream of mushroom soup
1 1/2 cup mayonnaise
2 teaspoons lemon juice
1 big tablespoon of curry
2 cups cooked brown rice
About 2 cups of cheese
Topping of your choice ~ bread crumbs, crushed crackers or chips
~Boil Chicken breasts till cooked
~Boil or steam broccoli till cooked
~Combine chicken soup, mushroom soup, mayo and lemon juice, curry and mix well.
(I like to add quite a bit of ground pepper at this point too.)
*Note- Some people (including me) swear by cooking these together in a pot on the stove it enhances the sauce. My brother does this and yes, he does make an amazing Chicken Divan
~ Chop up/Cut up broccoli and chicken
~Now the fun part! Layer ingredients rice first, then a little sauce, followed by broccoli, chicken and the rest of the sauce. Top with cheese and your topping.
~ Bake at 350 for about 45 minutes

This is a picture of my favorite type of curry to work with.
It comes in red, yellow or green. Very smooth mild flavor, and I highly recommend it!

The opening line made me laugh. Really hard. Which kinda hurts after delivery. But I forgive you. :)
This has always been a favorite of mine--Terry does not like curry anything,so I leave it out and we still like it!
